Eggplant parmesan or “Melanzane alla parmigiana” as it is known in Italy is one of my favourite Italian vegetarian recipes.
There are many discussions of where eggplant parmesan originated. Because of the name Parmigiana which means that it is made with parmesan cheese obviously Parma is an obvious choice. But there are also claims that eggplant parmesan comes from the campania region and also Sicily.
