Arancini or risotto balls as they are also known, are delicious rice balls from the Sicily region. They are called arancini as they are said to resemble little oranges.
This arancini recipe is a classic and does take a little time but you can make a fairly large batch of these and you can always keep them in the fridge or freeze them for another time.
