Spaghetti Carbonara

Spaghetti alla carbonara.  What can we say about this dish?  It has to be said that where  I live, in England this is a much loved recipe and which also differs somewhat from the one I had when I visited friends houses when I was a child.  The spaghetti carbonara I had at home when my Father made it was far removed from the “Spaghetti and cream soup” I had been subjected to on a number of occasions.

I am not having a go at people who love cream but, my aim with this website is to show the Italian recipes as they are supposed to be.  It is with this in mind that this spaghetti carbonara recipe is one which is authentic, delicious and does not contain any cream.( though you may add some if you wish!)

Ok enough ranting let’s tell you a little about the spaghetti carbonara recipe and where it originates.

Spaghetti carbonara is a pasta dish from the Lazio region of Italy (That’s the region my family are from) and it is said that it was given to the carbonari (charcoal men). History lesson over let’s move on.
